This is from the cookbook” The New McDougall Cookbook”. 300 Ultra-Low Fat Recipes. It is one of my FAVORITE cookbooks. It is on page 162. The whole family loves this soup. It is not the prettiest of soups but boy does it taste good. I keep the sides simple because it is very filling. You can also eat it with croutons and it is just as good. I made whole wheat bread and it was delish!
Leftovers are the BEST! You can eat it over a bed of rice or just plain. I like mine cold the next day for lunch.
1 1/2 C chopped onions
2 garlic chopped garlic cloves
8 C of water
1 C diced carrot
1 C diced celery (optional, not in original recipe)
1 bay leaf
1 T soy sauce / tamari
1/4 t freshly ground black pepper
1/4 t dried rosemary or 1 t fresh chopped
1 1/2 C green split peas rinsed well
1 1/2 C lentils
Cook for 45 min on low covered.
