Recipe Share | Copycat Chipotle’s Steak Burritos & Bowl

Our boys love Chipotle’s Carne Asada Burritos, but unfortunately the restaurant is well over an hour away from us. These copy cat recipes come in handy when they need their burrito fix. Plus it is much more affordable. Shelby

Cilantro Lime Rice recipe link (I doubled this recipe for our large family)

Pinto Beans; (Enough for 16 Burritos; you can adjust amounts down for less servings)
-1 tablespoon oil
-1/2 onion minced
-1/2 jalapeno minced
-1 large clove garlic. minced
-salt to taste
-60 ounce canned pinto beans, partially drained
-8 ounce canned diced green chilies
-1/4 teaspoon pasilla chili powder
-1 teaspoon ground cumin
Heat oil in frying pan, add onion, jalapeno and salt. Cook on low heat about 20 minutes. Add garlic and cook about 30 seconds. Add beans, green chilies and seasoning. Bring to temperature and then reduce heat and simmer 30-40 minutes, stirring frequently.

I used Carne Asada meat from Trader Joes; you will need 1 1/2 to 2 pounds of meat per 8 burritos, this is a good rule of thumb. Just grill, let rest for 10 minutes and then chop into bite size pieces.
