Spice Rub Hen Thighs with Brussel Sprouts and Potatoes Recipe

Yields: Four-5 servings
Prep Time: 10 minutes
Prepare dinner Time: 30 minutes

INGREDIENTS:
1 kilos fingerling potatoes, cleaned
1 pound brussel sprouts, backside and leaves trimmed
three cloves garlic, peeled and sliced in half
2 tablespoon extra-virgin olive oil
2 teaspoon Dijon mustard
1 teaspoon kosher salt
½ teaspoon black pepper
6 skinless and boneless rooster thighs

SPICE RUB INGREDIENTS:
2 teaspoon brown sugar
1 teaspoon kosher salt
1 teaspoon floor thyme
1 teaspoon onion powder
half teaspoon cayenne

DIRECTIONS:

Preheat to 425F levels.

On a sheet tray add potatoes, brussel sprouts, garlic. Drizzle with oil, mustard, salt and pepper. Toss properly to coat all greens.
In a medium bowl, whisk collectively brown sugar, salt, floor thyme, onion powder, and cayenne. Add in rooster and toss with spice rub till rooster is absolutely coated. Nestle rooster on sheet tray in between greens. Roast for 25 to 30 minutes, till rooster juices run clear and greens simply pierce with a fork. Shake pan midway through cooking.

Take away from oven. Let sit for five minutes earlier than serving.
