1 cup quinoa
half of cup chopped kale
half of cup shredded zucchini (salted & drained)
half of cup corn
2 cloves minced garlic
2 eggs
half of – 1 cup panko bread crumbs
1/four – half of cup shredded cheese
1 tsp salt
1 tsp black pepper
1 half of tsp steak seasoning
Coconut oil for frying

ROASTED RED PEPPER AIOLI
1 8oz jar roasted purple peppers (drained)
20 contemporary basil leaves
Juice half a lemon
1 clove garlic
1/c cup mayo
Salt & pepper to style
